My but-tocks are sore! Full confession. I haven’t worked out in a while – like nearly a year. I mean, I have been walking and doing a few down-dogs here and there, but real, consistent, strength- and endurance-building workout? Nada. It’s sweat time!

I am intrigued by HIIT (High Intensity Interval Training) workouts – sometimes called Tabata. I love the idea of shorter time, more workout. There are tons of them on Pinterest, too. Makes for fewer excuses. Am I right?

There is some great research out there that shows HIIT workouts burn more fat. This article from Chris Freytag shows that they are especially effective for those of us that are a bit insulin resistant, and have the best results in weight management when combined with a low-carb lifestyle.

Though I can’t hope to keep up to the fitness pros, I’m proud of getting by tuchus out there and doing something good for my body! I’ll keep you updated on my progress.

Game Day Slow Cooker No Bean Chili

Sunday, Football! Besides pumpkins, football is the best part of fall. My Denver Broncos are not playing today because they played on Thursday – and sadly lost. However, my second favorite, the Seattle Seahawks play Atlanta today. Go Hawks!

I love the crock pot for game day – or for every fall/winter Sunday for that matter. It’s great to get all my Sunday chores done, and have dinner magically make itself.

Start by heating the oil in a large skillet. Add the onions and peppers and cook until the onions are translucent – about 5 mins.

Brown the meat, and add all the ingredients in the slow cooker stirring well. Cook on high for 4 hours, or on low for 8 hours. Serve with your favorite chili toppings like cheese and onions. My dad likes to eat it with cilantro, sour cream, hot sauce and corn chips! Yum.


Crock Pot Game Day No Bean Chili

  • Servings: 6-8 hearty eaters

This hearty chili will keep you fueled to cheer for your favorite team.

Soften in skillet over medium heat, put into crock pot. • 2 tablespoons olive oil • 2 bell peppers, diced (green for a stronger flavor, red for sweet – or one of each) • 1 large yellow onion, diced • 4 garlic cloves, crushed

Brown the meat. Drain and put into crock pot. • 2 lbs ground beef (sometimes I replace one pound of beef with ground bison or turkey for an interesting depth of flavor and lower fat.)

Add the following ingredients to the crock pot with the vegetables and meat. Stir well. •2 (29 oz) cans tomato sauce •2 (15 oz) cans diced tomatoes •1 (6 oz) can tomato paste •1/8 teaspoon cayenne pepper •2 teaspoon ground cumin •6 tablespoon chili powder •1/2 teaspoon white sugar •1 t dried oregano •1/2 teaspoon dried rosemary •Salt & Pepper to taste


Cook in the slow cooker for 4 hours on high, or 8 hours on low. Serve with warm jalapeno corn bread and your favorite chili toppings.
