I woke up to no power this morning. So much for a shower! Thank goodness we have a gas stove. Mornings without coffee are not pretty around here. A big storm is headed for the Seattle area this weekend. We’re all hunkering down and getting prepared.
Fuel in the vehicles? Check! Flashlights + batteries? Check! Cell phone charged? Check! Downloaded books to the Kindle? Check! Wine cellar stocked? CHECK! I think we’ll make it.
Low Country Boil
I had planned to grill shrimp last night, but since it was too wet to BBQ, it was Plan B. As I was browsing the larder (as my Grandma Moo would say), I found sausage, potatoes, and the last of the season’s corn-on-the-cob. Bingo! Low Country Boil.
Usually, I cook this outside so I don’t steam up the house, but since that wasn’t an option, I thought, “make it in the oven.” It turned out great! Try it next time you want that beach-y feel without all the sand!
Low Country ‘Boil’ in the Oven

- 4 Andouille Sausage, cut into thirds
- 8-10 large frozen prawns, cleaned but not shelled (I buy these in bulk at Costco.)
- 3 ears corn-on-the-cob cut into 2-inch sections
- 1 lb. fingerling potatoes (or red potatoes, quartered)
- 1 medium onion coarsely chopped
- 2 bell peppers coarsely chopped, (I used red/yellow, but green would certainly add more Cajun flavor)
- 2 T. Olive Oil
- 2 T Old Bay Seasoning
- 2 sprigs Rosemary
Preheat oven to 400 degrees.
In a large mixing bowl, combine all ingredients and toss until well coated. Dump the ingredients into large Dutch-Oven style pot. Cover with lid or foil and cook for 45-60 minutes, or until potatoes are fully cooked. Salt and pepper to taste.
Serve with lemon wedges, hot sauce and lots of napkins!
